Cookies!

I just got home from doing a hour on the Elliptical and here I am posting about cookies.... at least I'm not eating cookies.... 

 All Natural... except for the Chocolate chips..... but a few in moderation is ok in my book!


Chocolate Chip Cookies



1/2 cup butter (1 stick), softened
1/2 cup of honey
1 egg
1 tsp vanilla
3/4 cup whole wheat flour
1/2 tsp baking soda
1/4 tsp sea salt
1 1/2 cups rolled oats
2 handfuls chocolate chips (about 3/4 cup)

Directions
Pre-heat oven to 350 degrees.
Whisk together butter and sugar until smooth. Add in egg and vanilla and continue to whisk.
Add in flour, baking soda, sea salt and rolled oats and stir together. Once fully combined, stir in chocolate chips.
Scoop dough into 12 mounds on ungreased baking sheet. Bake for 12-14 minutes, until edges are slightly golden. Cool on sheet for a couple minutes then move to a wire rack to finish cooling.





These were delicious!  And a huge hit with the kids!

In other news, I have kicked the Soda habit!!!  Well, for now. I don't want to jinx myself...  it's been one week since I had a soda, but not one day since I have wanted one!  I took Lent as the perfect time to try and free myself from the grips of soda addiction....so far so good, one day, or hour, at a time!  Even though I only drank diet soda, it is still full of things that my body does not NEED. Now if I could just eliminate Splenda... one thing at a time :)
